Meatless Monday Recipe–Michael Symon Corn Pudding With Collards And Mushrooms

Michael Symon is a promoter of Meatless Mondays and on a recent episode of The Chew, he prepared a vegan dish with the star of the new comedy about African-American life Black-ish, Anthony Anderson.
During the demonstration of Corn Pudding with Collards and Mushrooms, the two discussed Anderson’s decision to go vegan.
Using his latest TV series to make a pun, Anderson describes himself as “vegan-ish,” explaining that while he won’t consume meat, he won’t necessarily turn down a dish that has a bit of dairy in it.
The two used the opportunity to jokingly call this dish a little “black-ish,” because some of the ingredients–like collard greens and grits–reflect traditional and southern African-American cuisine.
The corn pudding is vegan, but can be made vegan-ish with the optional topping of a fried egg.
