Meatless Monday Recipe–Mayim Bialik Tomato Soup With Israeli Cousccous

Mayim Bialik knows vegan cooking is easy.
Her recipe for a one pot Tomato Soup with Israeli Couscous proves that an extravagant tasting plant-based meal doesn’t have to take hours in the kitchen to prepare.
“It tastes complicated, but making it isn’t.” she told US Weekly.
Israeli couscous is a bigger version of the tiny, protein-rich pasta that looks like a grain. It resembles small pearls and is hearty enough to be tossed around with vegetables and broth, still retaining its texture.
The soup is simple to make, but can always be made to taste more complicated by adding additional vegetables of your choice.
“Any diced vegetables can be added—squash would work well,” Bialik said.
