Meatless Monday Recipe–Giada De Laurentiis Stuffed Peppers Couscous Avocado Sauce

Giada De Laurentiis‘ latest cookbook, Giada’s Feel Good Food, contains over 100 recipes plus healthy living tips designed to make your body feel as great as your tastebuds do.
Giada is no stranger to vegetarian meals, and Feel Good Food is no exception.
Her Stuffed Red Bell Peppers with Whole-Wheat Couscous and Avocado Sauce is just one example of her creations you can have as a side dish or main entree.
With a look that is similar to rice, couscous is a pasta that packs a lot of nutrients into its small size. The whole-wheat variety provides extra fiber and helps give a great texture to the additional pepper filling mixture of olives, raisins and almonds.
Red peppers are called for, but you can always substitute green or another color.
As always, the cheddar cheese is optional or available in the vegan version.
