Meatless Monday Recipe–Giada de Laurentiis Chia Seed Pudding

Giada de Laurentiis‘ latest cookbook, Giada’s Feel Good Food, may be her most veggie friendly yet.
Last week, Vegetarian Star featured a Mexican dish for a chili slightly different from the usual–no beans.
Giada does such a good job of making plant-based cuisine, why not make this week’s Meatless Monday recipe an encore?
Feel Good Food is more than just recipes.
It’s also filled with some of Giada’s tips for keeping the slim figure she flaunts on the Food Network.
In the book, she touts the benefits of chia seeds, citing they are high in omega-3 fatty acids and fiber.
The chef uses non-dairy almond milk in the dessert that can be made completely vegan with a soy or otherwise non-dairy yogurt if you choose.
“This is a real treat: a no-cook creamy pudding that’s good for you,” Giada writes in Feel Good.
