Mary McCartney has a recipe for a salad inspired from her memories of eating growing up.

She discussed how her mother, the late Linda McCartney, would find a variety of different ingredients in the kitchen and put them together in a manner that was pleasing to the taste buds.

Salads are the perfect example of such an impromptu dish, as most anything can be tossed in them and they often don’t require extensive prep time.

“My mum would often rustle up a chef’s salad in a huge wooden bowl, making it up as she went along with whatever ingredients were at hand,” writes McCartney. “I still do that today when I can’t think of what else to prepare, and there’s not much that can’t — or doesn’t —get thrown in.”

McCartney’s Sprout and Carrot Salad is simple, yet delivers more excitement than the traditional salad with iceberg lettuce, tomatoes and vinaigrette. Sprouts are a common veggie sandwich topping, but not frequently found in salads.
