Roger Ebert Gave Vegetarian Food Two Thumbs Up

Roger Ebert has left a gigantic hole in the hearts of many who loved his commentary on movies, food and life in general.

He recently succumbed to the cancer he had fought so fiercely.

During his last years on Earth, Ebert gave two thumbs up to a plant-based diet, giving praise for films like Forks Over Knives and discussing the vegetarian dishes he created for his cookbook, The Pot.

After seeing Forks Over Knives, Ebert was so impressed he said the film was something that “could save your life.”

“What every human being should do is eat a vegetarian diet based on whole foods. Period. That’s it. Animal protein is bad for you. Dairy is bad for you. Forget the ads: Milk and eggs are bad for you. Skim milk is no better, because it contains proportionately more animal protein. What you’re trying to avoid is dietary cholesterol. You also need to cut way down on salt and sugar, and run like hell from high fructose corn syrup.”

One of Ebert’s favorite dishes to cook in his pot was SooFoo–a mixture of grains, beans and oats–with vegetables and spices.
