Art Smith On LYFE As A Meat Reducer
Written by Vegetarian Star on February 26th, 2013 in Business, Chefs, Food & Drink, Restaurants.
Art Smith is one of the brains behind LYFE kitchen, a restaurant in the LA area serving healthier convenience food.
Although LYFE is not a vegetarian restaurant, it does offer plant-based options for those customers. In addition, it serves more sustainable meat products.
Smith spoke with the LAist on his decision to remove some meat from his menu at home.
Vegan chef Tal Ronnen, who helped create the menu at LYFE, was a big motivator.
From the LAist:
How did you and vegan chef Tal Roonen collaborate on the menu? Do your styles and culinary perspectives differ?
I’m like St. Francis of Assisi of animals; I adopt everything. So I respect him and respect being vegan. I’ve stopped eating chicken actually. I respect vegetarians. There’s no pork on the menu. And the grass fed beef is from the Hearst Ranch. I think people in general need to eat more fruits and vegetables.
Visit the LAist for the entire interview.
