Quantcast Vegetarian StarMeatless Monday Recipe–Chloe Coscarelli Cinnamon Mocha Cupcakes (Video)

Chloe Coscarelli visited the set of AM Northwest to demonstrate one of several recipes from her first dessert cookbook, Chloe’s Vegan Desserts.

Her Cinnamon Mocha Cupcakes are just an example of why she won Cupcake Wars.

Her knack for finding unique substitutions for animal products is another reason why so many vegans and omnivores alike will want to pick up a copy of her cookbook.

Chloe uses coconut milk instead of dairy milk, an ingredient she says makes desserts really moist.

“A lot of people think vegan cupcakes are really dry,” Chloe said.

“But when you use coconut milk they’re really moist.”

Adding to her list of ingredient tricks, Chloe uses expresso powder to give the cupcakes a richer, chocolate flavor.
