Elisabeth Hasselbeck suffers from Celiac Disease–an autoimmune condition marked by an intolerance to gluten. Hasselbeck’s latest cookbook, Deliciously G-Free: Food So Flavorful They’ll Never Believe It’s Gluten-Free, contains this recipe for a delicious pasta dish for those that cannot digest traditional noodles with wheat.
Although Hasselbeck is not a professed vegetarian herself, many in the vegetarian and vegan community have also found following a gluten-free diet works wonders for a variety of stomach and digestive symptoms, including the most common associated with Celiac–bloating, diarrhea and constipation.
