Natalie Coughlin Grows Own Greens For Flexitarian Diet

Natalie Coughlin knows the importance of limiting her meat intake. And it’s so easy for this eleven time Olympic medalist to keep up her flexitarian diet since all she has to do is go straight to her own backyard garden.
“I really lean toward a plant-based diet,” Coughlin told Fitness Magazine. “I have seven vegetable beds, one is all kale since that’s one of the best foods for you.”
Coughlin enjoys smoothies of coconut water, kale, spinach, and romaine. Sometimes she likes to mix things up a bit, adding apples or celery to the mix.
“It’s harder when I travel and I don’t have a green drink handy. When I’m on the road, I just try to eat as many salads as possible.”
“I love meat, but I think it’s much healthier to eat vegetarian most of the time and eat it when it’s really delicious or in a smaller portion,” she told FitSugar.
