How can you tell if an eggplant is ripe?

“If it gets to the market, it’s generally ready,” Batali explains in the video.

“If you’re growing them yourself, eggplants tend to feel a little heavy for their size and have a full, smooth, dark shiny skin.”

Batali prefers to leave the skins on the eggplant when cooking with them but some prefer to peel it.
