Giada De Laurentiis has already predicted that vegetarianism is going to make it big this year.
The Food Network chef who’s mother’s vegetarianism inspired her to to create more plant-based meals recently expressed her appreciation for the Meatless Monday initiative, which encourages everyone to eat vegetarian once a week for better health.
“My mom is a vegetarian, and I’ve always had to find a way to make vegetarian dishes interesting and fun,” Giada said.
“And also, when you have children you start to realize what we’re doing to the planet and what we’re leaving behind for them. … God knows, I’m married to a man from Michigan who grew up on meat and potatoes, so I’m not going to take it away from him entirely. (But) I would like for her to learn that having vegetarian food and not having meat one day a week not only is great for you and your health, it’s also really great for the environment. You start to care about those things once you have children and you realize you’ve got to take care of their future. I never really realized that before I had kids.”
Giada’s White Bean Dip with Pita Chips is an excellent opportunity to introduce the meat and potatoes hubby or children to the meatless lifestyle without taking it away from them entirely.
