Meatless Monday Recipe–Paula Deen Pasta Salad

Of all the things Paula Deen is known for, vegetarian cooking is definitely not one of them.
But the Queen of cholesterol has managed to put together a refreshing pasta salad that doesn’t contain ham chunks and isn’t tossed with lard dressing.
Deen tosses in a plethora of vegetables in this bow-tie pasta salad–a trio of different peppers, onions and artichoke hearts.
This recipe suggests drizzling an Italian dressing over the finished product. There are companies that make natural and vegan dressings, but if you can’t access those brands, you may want to reconsider picking up the mainstream brand from the grocer’s shelves. Many salad dressings contain questionable preservatives, non-vegan ingredients and are high in sugar and fat. So make this week’s Meatless Monday a double recipe sampler and make your own vegan Italian dressing instead.
