Rocco DiSprito promised there would be plenty of vegetarian elements on his Bravo series Rocco’s Dinner Party, and on Wednesday’s episode of the show, vegan chef Ayinde Howell, former executive chef of Jivamukti Yoga School who later helped create Wildflower, New York City’s first vegan pop-up restaurant, is competing against two other chefs.
Ayinde’s star dish is Texas BBQ rubbed seitan with sauteed mustard greens and home-fried potatoes.
“I think the plate that comes before you should be a piece of art,” Ayinde says in a preview of the show.
