Rich Roll Writes Vegan eCookbook “Jai Seed”

Rich Roll, named one of the “25 Fittest Guys in the World” by Fitness Magazine, fuels his ultra-marathons with nothing but plants, with the occasional indulgence in vegan junk, potato chips being his biggest vice.
Roll, an endurance athlete in his 40s, has written an ebook, Jai Seed, that contains 77 pages of recipes, color photos and original artwork by his wife Julie Piatt for vegan dish ideas for breakfast, lunch and dinner.
Roll’s favorite dishes like vegan mashed potatoes, chia seed pudding and cashew cheese nachos are included in the 48 recipes as well as his tips for the best foods to eat before and after workouts in what The Biggest Loser coach Bob Harper called, “a great cookbook.”
“Jai Seed transcends the typical cookbook in a variety of ways,” Roll told This Dish Is Veg.
“At its core, it’s much more an artistic expression of our lifestyle than a simple transcription of recipes. With a presentation more akin to a digital coffee table book for the iPad generation, it is graphically very modern in its layout, with nutritional information and recipes embedded within a rich array of mixed graphic media, gorgeous photographs, and several images of my wife’s art. The idea is that plant-based nutrition isn’t just food – but energy. And the book strives to convey veganism not as the sacred purview of a marginalized subclass but as a progressive, healthy and manageable way of life for the modern contemporary family.”
