Steve Wynn’s La Cave Offers Vegan Gardein And More

A few months ago, it was announced that Steve Wynn had welcomed famous vegan chef and cookbook author Tal Ronnen to help create vegan items for the menus at Wynn Las Vegas and Encore dining establishments
QuarryGirl has been tipped off that one of Steve Wynn’s restaurants, La Cave, is already on board with its vegan menu.
One of the items on the menu includes the “Gardein La Cave,” starring gardein “chicken”, celery root puree and lemon caper sauce.
Accompanying the Gardein La Cave are items like Quinoa and Eggplant Caponata, Salt Roasted Beets with Vegan Cheese and Pistachio and Mushroom Tortellini with Arugula and Tomato “cream” sauce.
Each vegan dish at La Cave costs, on average, about $12.
Yelp already has reviewers singing praises about the vegetarian fare offered.
“Great food, environment & wine. The Wynn hotel does a great job with additions of vegan & vegetarian plates. All of the restaurants I have tried here at the hotel do a great job catering to the guests with dietary concerns. This restaurant had a great quinoa eggplant dish as well as the beet dish. it is hard to find a good beet dish.”
