Gwyneth Paltrow Brings Vegan Muffins To “Good Morning America” (Video)

Gwyneth Paltrow is the latest celebrity to create a cookbook with healthier items that is very vegetarian friendly.
My Father’s Daughter is compiled with 150 recipes for sandwiches, soups, main entrees, desserts and other dishes inspired by Paltrow’s memories of growing up eating and cooking with her father, the late director and producer Bruce Paltrow.
Similar to the recipes she often posts on her website, Goop.com, the creations in My Father’s Daughter involve the use of healthier, wholesome ingredients like agave nector, spelt flour and vegan mayonnaise, Vegenaise. If you don’t have access to those ingredients, she’s included a list of equivalents.
Gwyneth’s daughter Apple is a vegetarian, and My Father’s Daughter contains vegetarian and vegan alternatives to many of the children’s meals too.
Paltrow appeared on Good Morning America to showcase some meals included in her cookbook, one of which is the vegan muffins made from spelt flour. Although spelt is not gluten-free, according to some sources, it doesn’t cause the same problems as other flours in people who are sensitive to wheat. Spelt is also a good source of Vitamin B2, manganse, niacin, thiamin, and copper.
