Sheryl Crow was a guest on the Today Show where she demonstrated making several recipes from her new cookbook, If It Makes You Healthy, including these delicious looking Quinoa-stuffed poblano peppers with salsa romesco.

Crow’s right hand cooking man, Chuck White, was also a guest. Crow met Chuck shortly after she was diagnosed with breast cancer in 2006 and she vowed if there was any chance her diet could help her recover and stay healthy, she would make the necessary changes.

Some of those changes included eating more plant-based meals, and this is reflected in If It Makes You Healthy written by both Crow and White.

Many of Crow’s recipes use faux meats and cheeses and this one calls for soy cheddar cheese.

The accompanying romesco sauce may be just as interesting and tasty as the pepper it garnishes. Originating in Spain, romesco consists of nuts, usually almonds, pine nuts or hazelnuts, blended with roasted garlic and peppers.
