Bloomberg Businessweek has an article on how big food companies would like to dip their toes into the soy market waters after learning the USDA is now advocating Americans to eat soy.

Kraft Foods, Kellogg, and Hain Celestial Group are three big food players the article discusses that are ready to answer the question of, “Can the feds get Americans to trade in a sizzling rib-eye for a soggy block of tofu?”

On the positive note, mainstream food companies promoting soy and vegetarian products may do wonders to convince Americans to reduce the amount of meat and dairy they consume, or even cut it out entirely.

However, when big food companies start promoting items the majority of people aren’t aware of, there’s always the possibility of taking a good thing and screwing it up by adding things that don’t need to be there. Like chemicals, preservatives and various ingredients you aren’t interested in pronouncing when you’re hungry.

Much of soy is already genetically modified. And it doesn’t appear that that trend is reversing anytime soon.

In 2007, the proportion of GM soy crops increased to 91% from 89% in 2006.

We may not be able to taste the difference, but some studies suggest our health could be the true indicator of the safety of such crops.

Still, the news of soy’s popularity among big food corporations is better than learning these companies are trying to increase everyone’s red meat consumption as a new-found panacea for [insert problem for human health].

And big companies like Hain Celestial are already using organic ingredients like corn in their products.

Let’s hope they all choose to use soy responsibly. And don’t use “soggy” where referring to tofu. It’s so bad for the image.
