Mark Bittman Leaving “The Minimalist” For Sustainable Food Column

After 13 years of entertaining readers with food writing and recipes in his weekly New York Times column, “The Minimalist,” Mark Bittman has announced he’s starting a new opinion column for the newspaper, starting February 6, 2011.
Bittman’s new column will focus on eating practices sustainable for the environment, food politics and health and nutrition. It will run online and occasionally in print.
Bittman is the founder of his self-named “vegan until 6 p.m.” form of vegetarian flexing, meaning only his dinners may contain meat. Last year he wrote a special Thanksgiving column for the Times Well blog containing vegetarian and vegan recipes.
The author of How To Cook Everything Vegetarian said of his new column, “It’s not a change that’s going to betray anything I’ve done in ‘The Minimalist.’ It’s not like I’m going to write about molecular gastronomy every week and use nitrous oxide. It may be more of a change of scenery.”
