Vegan chef and cookbook author Bryant Terry is known for his eclectic combinations of plant-based ingredients that reflect African cuisine.
Bryant’s Glazed Carrot Salad is from his latest collection of recipes, Afro-Vegan: Farm-Fresh African, Caribbean and Southern Flavors Re-mixed.
The phrase “re-mixed” is not just part of a catchy title, but a description of what Terry does in his kitchen on a regular basis.
“The approach I took is that of a collagist. … I take dishes from the African diaspora and kind of cut and paste ingredients and flavor profiles into a totally different or brand-new recipe,” Terry said.
This technique routinely includes fresh herbs and spices, two items Terry lists as staples.
