Meatless Monday Recipe–Rachael Ray Vegetable Nacho Supreme

Game day is traditionally filled with meaty appetizers like chicken wings, but a vegetarian or vegan football lover can still score at home with his big screen if he makes Rachael Ray‘s Vegetable Nacho Supreme dish for the event.
There are nachos.
And there are nachos supreme.
More than cheese and chips, Ray’s recipe adds real vegetables like zucchini and corn.
The vegetarian refried beans (check the can for no lard) are cooked in a vegetable broth seasoned with chipotle in adobo.
Top off the presentation with a handful of fresh cilantro leaves for the freshest Mexican flavor.
As always, the dairy cheese can be substituted for a vegan version.
