Meatless Monday Recipe–Giada de Laurentiis Vegetarian Chili Verde

The Queen of Italian has a new cookbook out with at least one recipe that borrows cuisine from Mexican culture.
Giada de Laurentiis‘ Giada’s Feel Good Food: My Healthy Recipes and Secrets contains 120 recipes that highlight the healthier side of her cooking, which, along with a few of her favorite good living tips, she uses to “maximize energy and remain fit.”
Chili is often thought of as a dish with beans, but Giada has chosen to skip these, using potatoes and hominy to add a meatier texture to the stew.
This celebrity chef has done everything right for a vegetarian entree, even listing vegetable stock in the ingredients versus chicken or beef like many non-vegetarian chefs who create meatless meals do.
Giada’s Feel Good may be one of the more veg-friendlier cookbooks she’s produced so far.
