Todd Oldham Onion Jam And Food Adventures For New York Magazine

Todd Oldham has known for a long time that meat-free is always in fashion.
The designer who’s brought us affordable and chic designs gave New York Magazine a glimpse into what the better dressed folks like himself eat during a typical week for its food feature “GrubStreet.”
During the week he played chef for himself and a few guests, but he also took advantage of the dozens of places in the area that serve plant-based food, including those that do not cater entirely to vegetarians.
He was able to find something great at Pret-A-Manger, a popular fresh food cafe inside the Target stores where many picked up his brand in the early 2000s.
“They have sandwiches at Pret A Manger where you can buy one half at a time, so I got the one-half cheddar-chipotle sandwich for lunch,” Oldham said. “Sometimes all I want is half a sandwich. It’s perfect.”
At home, he was a master at making one of his favorite dishes of onion jam.
“It’s easy to do and only takes about an hour. It’s like you’ve been cooking onions out of control for way too long. Sauté three onions down into a delicious glop. You don’t have to really ginger it, just give it a stir every once in a while. It’s just balsamic vinegar, a little soy sauce, red onions chopped finely — they have to be about the same size — salt, pepper, capers, a dollop of Dijon mustard, and let it go.”
Maybe we’ll start to see this specialty food product from Mr. Fashion on the shelves next to his furniture collection soon.
