White House Kids State Dinner

A child from Maine has produced a winning vegan recipe and won the opportunity to attend the second annual Kids State Dinner at the White House.

The dinner is an event created by First Lady Michelle Obama as part of a larger series of initiatives designed to encourage healthy eating by America’s children. Children and their parents across the country were asked to submit their favorite original healthy recipes.

Nine year old Noah Cook impressed judges in the Healthy Lunchtime Challenge with his Vegan Powerhouse Pesto Pasta.

Traditional pesto sauce uses cheese. Koch replaces the animal product with avocado and uses walnuts instead of the usual pine nuts. The entire recipes calls for two avocados, lemon juice, spinach, basil, walnuts, white beans, garlic and just a quarter-cup of olive oil, saving on fat as many versions of pesto call for up to three cups of oil.

“I never really liked red sauce, but I always liked pesto,” Koch said. “What I really wanted it to be was a superfood, so I took out some of the oil and added some tomatoes, white beans, spinach and avocado.”

In a press release, Mrs. Obama said:

“Our Kids’ State Dinner is one of my favorite events of the year, and the kid chefs who come from around the country never cease to impress and inspire me with their creativity and ingenuity.”

“I’m counting down the days until the winners join me at the White House to celebrate these healthy and delicious meals that kids everywhere will love.”

The second annual Kids State Dinner takes place next month in July.
