Quantcast Vegetarian Star“Masterchef” Nikki Dinki Makes Vegan Sloppy Joes (Video)

Nikki Dinki is the Masterchef contestant with the flexitarian philosophy of “meat on the side.”

While many vegetarians applaud her attempt to get everyone to eat less meat, some were a little less than pleased that on a recent episode she put real meat in a burger with vegetables versus making a vegetable burger or other plant-based entree and actually putting the meat on the side.

Dinki’s vegetarian sloppy joes more than make up for this faux meat faux pas.

Completely vegan, these sloppy joes use portabella mushrooms–vegetables known for imitating a hearty, meat texture.

Dinki demonstrates each step in the process of making a vegan sloppy joe, from the sauteing of the mushrooms and peppers to making the homemade sauce.

Keeping with her meat on the side principle, Dinki ends the segment by reminding meat eaters they can swap half the mushrooms for half meat.

But when you have a sloppy joe with meaty portabellas, who would want to?
