How about a little edamame dip to celebrate Meatless Monday?
Edamame beans make a great alternative to chickpeas in this slightly spicy dip that’s a twist on an vegetarian favorite–hummus.
Pita chips are recommended for dipping, but you can scoop up this dip with tortilla chips, other types of bread like french or whole grain and even fresh veggie sticks.
This recipe was adapted from her cookbook, Home Cooking with Trisha Yearwood.
