Meatless Monday Recipe–Gwyneth Paltrow Chili With Sweet Potato
Written by Vegetarian Star on April 22nd, 2013 in Actresses, Food & Drink, Meatless Monday Recipe, Recipes.
Gwyneth Paltrow is a flexible chef and it’s not because of the yoga moves she does at home.
The actress and cookbook author frequently makes vegetarian meals that she discusses on her Goop website. And for the meals that are meat-based, she’s a good one to call on for plant-based substitutions.
Like the one in her Chili recipe featuring sweet potatoes.
The original recipe is taken from her latest cookbook It’s All Good.
Although the recipe calls for turkey, Gwyneth recommends vegan chili eaters double the amount of black beans to make up for the protein.
Sweet potatoes make a nice colorful alternative to traditional white chili ingredients such as potatoes or white beans.
Nutritionally, they also make a cup or bowl of this chili a power meal for Vitamin A.
