Gwyneth Paltrow On Chickpeas–“It’s All Good”

Gwyneth Paltrow has written a new cookbook, It’s All Good: Delicious, Easy Recipes That Will Make You Look Good and Feel Great.
The inspiration for the collection of recipes stems from a recent bout of fatigue and other symptoms the actress experienced. A visit to a doctor left her with a prescription of with several food restrictions, including meat and dairy.
It’s All Good is far from a vegan cookbook (publisher’s description lists Salmon Burgers as one of the featured recipes), but the New York Daily News describes it as a “collection of 185 “restorative” dishes that also come with a slew of food restrictions: recipes are sugar-free, non-dairy, vegetarian, wheat-free and non-alcoholic.”
And there’s a hummus tartine with scallion mint pesto recipe that sounds at least vegetarian.
At least we know Gwyneth likes chickpeas.
Check out how she pairs chickpeas with onions, tomatoes and cilantro for a different twist on salsa in this recipe from her website Goop and look for It’s All Good in April.
