Mark Bittman Reissues “Leafy Greens” As A Teaser To “Vb6”

Mark Bittman has reissued his book, Leafy Greens: An A-to-Z Guide to 30 Types of Greens Plus 120 Delicious Recipes.
This should keep vegetarians busy until the release of the New York Time’s columnist book on flexitarian eating, VB6: Eat Vegan Before 6:00, in March 2013.
From the title of his soon-to-be released book, you’ve probably guessed that Bittman isn’t out to chatised everyone for not going completely veg. He’s not. But for every “half-vegetarian” out there, that means less greenhouse gases released from large farms, less animal suffering and less health care costs in a time where obesity and other “diseases of affluence” are the norm.
“For better personal and planetary health, the idea is for all of us to move away from the Morgan Spurlock end toward the vegan end,” said Bittman about the film maker who ate McDonald’s for 30 days in front of his vegan chef girlfriend. “I don’t think that means we have to become vegans. But I do think we need to move toward eating a greater portion of plants.”
