Quantcast Vegetarian StarMeatless Monday Recipe–Gwyneth Paltrow Better Breakfasts

Gwyneth Paltrow

Gwyneth Paltrow consulted with Dr. Frank Lipman, an acclaimed Integrative Physician and the founder and director of the Eleven Eleven Wellness Center in New York City to  figure out what to eat at the hour that she’s barely awake.

“Do you ever ask yourself why you are virtually comatose at the desk by 10:30 am, even though you actually ate breakfast?” Dr. Lipman asked on Paltrow’s Goop blog. “Chances are you were barking up the wrong nutritional tree.”

The wrong nutritional tree is growing items like sugary cereals, sausage and coffee, according to Dr. Lipman. But he and Gwyneth have shared a few breakfasts that grow on trees not bearing forbidden fruit. Or at least grow from the ground.

Almost all are vegetarian, most are vegan. Some of our favorite ideas include Last Night’s Leftovers–whatever veggies you ate for dinner the night before.

“Savory foods for breakfast? Why not? Go ahead, put your leftovers to work – veggies and protein are great any time of day – no need to relegate them to only-for-dinner status. How about a breakfast of baked sweet potato drizzled with coconut oil and Himalayan salt with some steamed kale and quinoa on the side?”

There’s also a selection of non-dairy smoothies to choose from, including chocolate, mint chocolate and pina colada.

Chia Seed Pudding may be the most unique breakfast on Gwyneth’s menu.

For the traditionalists, a bowl of slow-cooking gluten-free oats, millet, quinoa, amaranth or brown rice porridge simulates the experience of a hot bowl of oatmeal.
