Anne Burrell Likes To Mix Up Her Greens

Food Network star Anne Burrell knows the Secrets of a Restaurant Chef lie in the chef’s ability to turn a dull, boring salad into a lively one with a variety of greens.
“I try to be surprising when I make salads,” Burrell said. “I love using less traditional greens, like escarole, which has a real bite to it and can stand up to other strong flavors. And I like to play with textures. One of my favorite salads is based on raw asparagus cut really thin so it’s super crisp but still tender.”
If you are tired of eating the same spinach salad every evening, make your next trip to the grocery store a lesson in introducing different greens on your plate.
The Cook’s Thesaurus has a handy list of lettuces and other greens, a description of their best uses and suggestions for alternatives that can be substituted in dishes.
Got a recipe that calls for escarole? The Cook’s Thesaurus suggests using curly endive, radicchio, borage, mustard greens, arugula or spinach in place of the slightly bitter leaves.
