Meatless Monday Recipe–Gwyneth Paltrow’s Dip With Avocadoes

Avocadoes are usually associated with guacamole, but Gwyneth Paltrow‘s cookbook, My Father’s Daughter, keeps the lushious green fruit together and lathers it with a dip instead.
Paltrow is known for her love of vegan mayo Vegenaise, and recommends it for the white, creamy topping that includes sour cream and dijon mustard.
As always, this almost vegan recipe can be made truly animal-free by swapping the sour cream for a dairy-free version.
Ingredients:
- 1 cup mayonnaise or Veganaise
- 1/2 cup sour cream
- 2 tablespoons chopped parsley
- 1/2 teaspoon Dijon mustard
- 2 scallions, finely sliced
- 1 clove garlic, minced
- 1/2 teaspoon fresh lemon juice
- Pinch of salt and pepper
- 1 tablespoon capers (optional, in my book)
- 1 pinch celery seeds
Instructions:
- Mix everything together and serve over avocado halves!
