Prevention magazine has been providing the world with the latest news and advice on health, nutrition and cooking for decades.

In a recent online article, the magazine has joined the growing trend of mainstream magazines recognizing the vegetarian and vegan lifestyle as a valuable component to health and featured five women who opted to go veg for reasons ranging from health to animal rights.

An organic gardner, a collectibles dealer, nurse, marketing consultant and jewelry designer all removed meat from their diets. Three of the women removed animal products entirely and went vegan.

The Organic Gardener:
“Now I’m purely vegan, and I eat more produce than I ever imagined possible. I’ll saute a big batch of veggies for the week. I freeze vegetables straight from my garden and can them, and I make my own salsa.”

The Collectibles Dealer:
“In the weeks after Dad’s funeral, I began to think about my own diet. The meats I loved–hot dogs, salami, bacon–were among the unhealthiest ones you could buy. I’d eat them with a side of starch–not whole grains, either–and I picked around any vegetables. Seriously, I ate like a three-year-old. I figured I was doomed unless I did something drastic.”

The Nurse:
“Ever since childhood, I’ve been an animal lover. But it was only four years ago that I finally made the connection between what was in my heart and what was going into my mouth.”

The Marketing Consultant:
“Before, I was a horrendous cook, but vegetables are a lot more forgiving than meats, so now I’m more confident in the kitchen.”

The Jewelry Designer:
“It’s hard for me to know the impact being a vegetarian has had on my health, because for three decades I haven’t eaten any other way. But I know from my days of being a nurse back in England that a lot of women start to need medication and feel their health slipping by the time they’re 50. And, me? I still feel as fabulous as I did at 25!”
