Quantcast Vegetarian StarGlenn Beck Eats This–Yummy Stuffed Peppers

Now that Glenn Beck is following a vegan diet, more meaningful things will at least be going into his mouth–even if not necesarily out.

Beck has posted several pics to his Twitter that showcase what he’s eating for breakfast, lunch and dinner these days.

This pepper that is stuffed with what appears to be a wild rice or similar grain looks mouth watering.

Not that anyone wants to emulate Glenn Beck, but if you started to eat like Beck, you’d be getting the benefits of powerful antioxidants from Vitamins A and C found in bell  peppers. These antioxidants neutralize free radicals, molecules that damage the body’s cells and can lead to many diseases that are also associated with poor diets, like high cholesterol, heart disease and diabetes.

Stuffing these antioxidant houses with grains provide fiber to keep you full. Add protein-rich beans or tofu and you’ve got a complete meal.
