Meatless Monday Recipe–Gwyneth Paltrow Fried-Zucchini Spaghetti

Gwyneth Paltrow shared with Food & Wine magazine her favorite restaurants across the United States. Each restaurant has a personal story or experience to go along with it and Paltrow chose an Italian restaurant in Manhattan’s upper east side that she ate at frequently as a child, Elios.
Paltrow was inspired to make a pasta dish from Elios fried zucchini.
The recipe is simple. The fried zucchini is added to spaghetti and tossed with fresh basil leaves and pepper. The ingredients call for 1 cup shredded Parmigiano-Reggiano cheese, but every vegan knows cheese in an already protein-rich pasta dish is completely optional. You may also be inspired to add a vegan cheese of choice.
