If you try to go from eating meat to straight up raw food you’re not gonna last. So little by little just phase out the poisonous foods and replace them with healthy substitutes.”

The Red Bamboo restaurant Joseph is referring to is one of many vegetarian and vegan establishments that serve mock versions of old time favorites like B.L.T.s, Philly Cheese Steak sandwiches and Chicken Parmesans.
Long-term vegetarians and vegans may dislike mock meats because they are processed or taste too much like the real thing. But faux products are quite handy for beginners who gave up eating animal products for reasons other than taste preference.
Of course, meat substitutes don’t ever have to involved textured soy or any other processed ingredients, such as the case with seitan (made from basically flour).
