Meatless Monday Recipe–Ted Danson Vegan Vegetable Soup

Nothing’s worst than reading a can of “vegetable” soup only to find beef or chicken stock as an ingredient.
But who needs those condensed cans of liquid vegetable animal when you make your own from scratch?
David Moss’ Hollywood & Dine page at Fox 8 News is full of celebrity recipes he created based on his experience with the stars. After interviewing them, Moss heads to the kitchen to create a meal they’d enjoy. He’s whipped up meals in the name of Jessica Alba, Ashton Kutcher, Gwyneth Paltrow and more.
Ted Danson‘s vegetable soup is not only vegan, but convenient. Instead of spending minutes in the kitchen chopping up multiple veggies, Moss allows the use of frozen carrots, green beans, corn, peas and more.
This may be your first introduction to napa cabbage, a Chinese cabbage that’s lighter in color than regular cabbage, and similar to the color of bok chok. Lima beans provide a little protein and the first ingredient in the recipe is…gasp…not chicken, beef, turkey, but VEGETABLE broth.
