Catering staff at the 62nd annual Prime Time Emmy Awards will have the challenge of feeding over 3,000 guests on Sunday, which is said to be the largest annual formal dinner in America. Patina Restaurant Group founder Joachim Splichal and Patina Catering executive chef Alec Lestr have every step of the logistics down from bottles of wine to number of plates and yes, even pounds of vegetables. The evening’s grocery list is expected to include the following:
- 1,750 California avocados
- 900 pounds of heirloom tomatoes
- 300 pounds of chickpeas
- 195 cooks using all of their elbow grease
According to Kansas City, special requests are usually vegetarian and vegan, and the staff has several options, including Portobello mushroom ravioli with braised baby artichokes, crisp mushrooms and micro basil.
As expected, standards for quality are high, and not every dish makes it to a guest on the first time. Reheating and other modifications will occur and about 5% of the meals will end at The Midnight Mission, a Los Angeles organization that helps the homeless become self-sufficient through education, training, shelter, recovery programs for alcoholism and food.
