“Masterchef” Graham Elliot Offers Vegan Watermelon Gazpacho At Lollapalooza

Chicago restaurateur and judge on the new Fox cooking show Masterchef, Graham Elliot (who owns an eatery on W. Huron where president Obama was reported to celebrate his recent 49th), is the 2010 culinary director of Lollapalooza, so he’s partially responsible for ensuring vegetarians have a good selection on the festival’s menu. Not that the Graham Elliot restaurant is the most vegetarian friendly with lamb, salmon and other animals on the menu.
At his Graham Elliot stand in Chow Town, the food area of Grant Park in Chicago where Lollapalooza is being held through the 8th of August, Elliot is featuring a vegan watermelon gazpacho dish that also happens to be gluten-free.
Gazpacho is a raw vegetable soup normally made with tomatoes as the base, but some have substituted the fruit for a surprisingly pleasing result.
For those that don’t make it to Elliot’s booth, this recipe was featured in USA Weekend’s “Make it a Cold One,” and combines the cool taste of melon with the hot kick of jalapenos.
