Today is the last Meatless Monday recipe before Thanksgiving and what better way to celebrate a holiday tradition than with a traditional meal of fried NOT-chicken!

Guaranteed to put KFC to shame, this vegan fried chicken doesn’t involve birds being scalded in hot water or their throats slit (a nice image to accompany while eating real chicken, though), but it does involve Gardein faux chicken fillets, Chick’n Scallopini, available from natural and veg-friendly stores like Whole Foods. This recipe if so perfectly put together, you could probably even substitute another vegetarian chicken if Gardein is no where to be found.

The vegan dinner prepared by the Horizon’s chef at the The Beard House of the James Beard Foundation was a hit, according to blogger at green gossip site Ecorazzi.

“…a shallow bowl of mustard croutons and upland cress was filled with warm, savory Sunchoke and Horseradish Bisque. Paired nicely with a 2008 Pfaffenheim Pinot Blanc, I’m quite sure nobody noticed the lack of shellfish or heavy cream. Yes, it was the kind of soup that could make even the most humble vegan quietly whisper, “I told you so.””

Ecorazzi then goes on the question what Beard would have thought of the vegan feast, concluding he would have been impressed. Vegan food is usually the most sustainable out there, and according to some sources, it would have aligned well with Beard’s ethics.

The James Beard Foundation, a non-profit dedicating to promoting the culinary arts, is hosting a vegan dinner at The Beard House in New York City on Wednesday, June 9th 2010.

The cost is $165 per person if you’re not a board member, but a look at the menu will have you willing to eat beans and peanut butter for a month, given all the mouthwatering selections you can consume tomorrow evening.

Guest can start off with the Hors d’Oeuvres from the seasonal spring menu featuring Grilled Seitan and Horseradish Crèpes with Braised Butter Lettuce, Bruschetta-Style Tofu Banh Mi with Pickled Daikon and Charred Shishito Peppers or Wood-Grilled Shiitakes and Baby Leek Yakimono.
