The 2nd annual competition for a seat at the White House Kids State dinner was a big success for plant-based eating.
The event thrown together by the First Lady is meant to encourage children and their parents to prepare and cook healthy meals involving several food groups. It’s one of several of her initiatives to reduce childhood obesity.
Eat vegetarian or vegan is one of the best ways to stave off excess weight.
Those who consume such as diet are at reduced risk for obesity and many diseases associated with it, such as heart disease and diabetes.
Ganesh Selvakumar of Broomall, Pennsylvania earned a seat at the exclusive event for this Lentil-Spinach Soup and Mint Chutney.
Chickpeas are the perfect protein component for the chutney that is also enriched with high-protein red lentils and seasoned with tamarind, chilles, mustard seed and other Indian flavorings.
Kids are known to be picky or get bored with their food.
Maybe this dish is the one that will never get traded at lunchtime this fall.
