Meatless Monday Recipe–Marcus Samuelsson Roasted Sweet Potato Okra Salad

If your usual 4th is about throwing faux meats on the grill and preparing potato salad with vegan mayonnaise, there’s nothing wrong with that.
But Marcus Samuelsson has a potato salad recipe that jazzes up the classic mayonnaise version and wins the taste buds of vegetarians, vegans and omnivores.
It also goes great with grilled veggie burgers.
The Ethiopian born and Swedish raised chef is known for creating plant-based dishes that use traditional African staples. Yam and okra in this potato salad are no exceptions and the combination is topped with toasted mustard seeds and capers.
Samuelsson is the author of several award-winning cookbooks, including one that has won an award from the James Beard Foundation.
He was a guest chef for the first state dinner for Barack Obama and assisted in creating a mostly vegetarian menu for the event on the South Lawn to honor India Prime Minister Prime Minister Manmohan Singh.
