Bobby Deen Vegetarian Gumbo Recipe
Written by Vegetarian Star on May 8th, 2013 in Chefs, Food & Drink, Recipes.
Bobby Deen was in the city of Chicago last month to participate in a Diabetes in a New Light cooking demonstration at the American Diabetes Association Expo.
In a feature in Shore Magazine, Deen explained that eating healthy doesn’t mean sacrificing taste, even if you had dietary restrictions. His mother’s weight loss and health transformation after learning of her Type 2 diabetes is a perfect example of this. While Paula hasn’t gone all veggie on her fans yet, she has definitely learned to replace the butter and bacon with healthier oils and greens.
The host of Not My Mama’s Meals is always trying to find creative ways to reinvent some of his mother’s traditional southern recipes with ingredients that are healthier.
His vegetarian gumbo will hit the flavor spot with meat eaters, vegetarians and those with special health concerns.
Bobby said of the recipe:
“Cuisine from the bayou will always have a special place in my heart; it’s so full of spice and soul. This meatless version of a Cajun classic cuts down on the saturated fat and calories by replacing the meat with mushrooms and veggies and using a low sodium vegetable broth, but I promise y’all won’t miss out on any of the flavor. Fix this stew on a chilly night for a dinner that’s sure to warm you up.”
