“Betty Goes Vegan” Authors On “Today” (Video)

The authors of Betty Goes Vegan, a cookbook created by Dan and Annie Shannon that veganizes many traditional recipes from the classic Betty Crocker cookbook, were guests on Today.
The Shannons discussed several reasons for eating meat and dairy-free versions of Betty Crocker’s chicken recipes.
“I think everybody has their own reasons for going vegan,” Annie said, adding that although she and Dan are vegan because they love animals, others adopt the diet for specific health reasons, such as lowering cholesterol.
The Shannons walked viewers through three recipes from the book–Pesto Chicken and Vegetable Sandwich, Sweet Potato Risotto and salted caramel and apple whoopie pies.
