Meatless Monday Recipe–Mario Batali Vegetable And Farro Soup

Mario Batali not only supports Meatless Mondays, he’s implemented the holiday at his multiple restaurants and even offers cooking classes on plant-based dishes.
One such meatless offering at his restaurant Eataly features a vegetable soup created from a medley of carrots, peas, leeks and onions.
Beans are thrown in the mixture for protein, making this soup perfect for a main course or a side dish.
‘The fact is, most people in the U.S. eat way more meat than is good for them or the planet, but even knowing this, the chances are little that we are all going to become vegetarians, much less vegan,” Batali said.
“Asking everyone to go vegetarian or vegan is not a realistic or attainable goal, but we can focus on a more plant-based diet and support the farmers who raise their animals humanely and sustainably.”
