White House Kids State Dinner Winner BBQ Chickpea Burger Story

Michelle Obama invited kids from each of the 50 states and their families to the first ever kids White House State Dinner. The children were winners in the First Lady’s Healthy Lunch Contest, where they were encouraged to create recipes from whole foods, emphasizing fresh fruits and vegetables and grains.
One attendee and winner, 8-year-old Finwe Wiedenhoeft from Mineral Point, Wisconsin, has a terrific flexitarian story behind the family’s winning Barbecue Cheddar Chickpea Burger recipe.
The oldest Wiedenhoeft son was off at Navy boot camp and because he was going through such a grueling daily physical routine, the family decided to show support by working equally as hard at something.
For the length of the eldest Wiedenhoeft’s boot camp, the family only ate animal-free meals.
The Healthy Lunch Cookbook, containing recipes from all 50 winners, is now available for download at Epicurious.com.
