Lahav Ardi, one of the winners in the White House’s Healthy Lunch Contest, stopped by Salt Lake City’s ABC4 to demonstrate his winning recipe, Lentil Veggie Soup, and give a few pointers about cooking.
“The smaller they’re cut, the quicker they cook,” Ardi said about cooking potatoes in the stew. He also gave a tip for cutting vegetables without cutting off your fingers.
Move over Rachael Ray, please give this little guy his own Food Network show.
Start with a vegetable broth base and add green, red lentils and barley.
Add vegetables like potatoes, carrots, peas, corn and mushrooms, throwing spices like oregano, basil, cilantro and sage in the pot.
The final product is a vegetarian soup full of plant-based protein and vitamins that even a third grader can prepare.
Grab the recipe for Ardi’s Lentil Soup at ABC4.com.
