Target’s newest opening in downtown Chicago will feature a Pret A Manger, a small chain of nationally recognize restaurants that serve natural foods.
More prominent in the UK, Pret A Manger stores feature an in-house kitchen and bakery and a fresh selection of daily soups, salads, sandwiches and more.
A few of the vegetarian items listed on Chicago’s menu include Falafel, Avocado and Pine Nut Wrap and several fruit salads.
“If Target can make this work, it will be incredible to watch,” says Christopher Muller, dean at the hospitality school at Boston University.
In addition to lunchtime favorites, Pret A Manger offers snack items like popcorn and healthy breakfasts like steel-cut oatmeal.
The company, which describes itself as a “cross between a good restaurant, an Italian coffee bar and a bullet train,” has already opened 43 other stores in New York, Chicago and Washington, D.C.
