The stereotypical vegetarian protein staple is the bean. Even more stereotypical are the kidney or pinto beans. Then there’s beans and rice. Bean burritos.
Okay, who’s ready for a bean change?
Emeril Lagasse‘s White Bean and Kale Stew shows beans are good for something else besides chili.
Featured on an episode of The Dr. Oz Show, this White Bean and Kale Stew brings together white or cannelloni beans, fresh kale, onions and other spices for a soup that thankfully doesn’t always include tortilla chips.
But feel free to add some if you’d like.
Although not a vegetarian, Emeril has recently made a commitment to incorporate more plant-based meals into his cooking repertoire, especially those that utilize fresh ingredients that can be purchased locally or grown.
The result is the promotion of delicious vegetarian and vegan recipes from one of the biggest names in celebrity chefs.
That can’t be a bad thing.
Even if it still promotes the stereotypical bean.
